Asparagus & Leek Dip with Bagel Chips

Ingredients

3 tbsp butter
3 garlic cloves, minced
1 leek, cleaned and chopped, pale green and white part of leek
2 bunches asparagus, trimmed and cut into 1” pieces
1 1/4 cup chicken broth
1/2 cup sour cream
1 bag Plain Lenders’s Bagels, toasted until crisp
salt and pepper to taste

Directions

    1.

    In a large saucepan, melt the butter and add the garlic and leek. Stir together until leek is softened.

    2.

    Add the asparagus, salt and pepper and chicken broth. Blend together and cook over medium heat until asparagus is really soft

    3.

    Puree the mixture until smooth, or put in the blender until smooth.

    4.

    Add sour cream, turn heat to low and mix together.

    5.

    Toast Bagels until crispy.

    6.

    Serve dip while warm in a bowl and add bagel chips around.
